Gearing up for the visit to the production area. She obviously loved the white boots :P

900kg of quality rice waiting to become Sake

Tasting Sake lees which are the residual after sake production after the liquid is filtered and pressed out. Used in various japanese cooking recipes.

"Inspecting" a fermentation tank ... 23,165 liters worth of sake

Some of the good stuff are still hand-pressed. I guess these are the guys with the perfect soft and white hands due to the sake pitara.

Sampling some Shingo no Ippon freshly pressed and un-pastuerised ... the complexity of taste is just amazing

The bottling facility and the final product

Explaining the significance of sugidama, the traditional ball of cedar tree leaves

Back to the office and now the tasting begins. Besides the standard product ranges, we were also offered some monthly limited releases to taste. I like to say thank you for hosting and we are very impressed by your generosity.

Obviously happy after trying all these bottles

Beside Sake, Shirataki also has a cosmetic range. The ladies where more interested and I was too busy with the sake to take pictures of that :>
In concept, it is what SKII made famous with the use of Pitara for skin whitening ...
Thank You Sakurai San and Miyami San, we totally enjoyed ourselves.
If you have 1 to 2 hours to spare in Echigo Yuzawa , I would highly recommend that you visit them. Do note that reservations are required as the staff needs to prepare to bring you around.
